For being a relatively simple recipe, I was flabbergasted when I first saw eggs in a basket. It's unique. It's cute. Plus, it's the perfect balance of protein & carbs. If you're like me & late in the game of seeing these, eating these, or learning how to make it, I'm going to give you a quick recipe so you can achieve eggs in a basket at your own leisure.
// Ingredients //
+ 1 egg
+ 1 slice of bread
+ pan
+ coconut oil or oil of choice
// How to make it //
1. Before you deal with the food, begin by heating up your pan. Don't pour the oil until the pan is hot hot hot; it's actually a cooking no-no to place anything before the pan & oil are at the correct temperature. Then drop in coconut oil or your oil of choice. Let the oil heat prior to adding your food.
2. Get your piece of bread. Place the cup on top, press down, & gently twist to create the perfect circle for your egg. Voila! It's gorgeous, no? I don't know what other people use to create the circle, so I improvised. Everyone has a cup! Choose one with a smaller rim.
3. Now put your bread in the pan, crack your egg & place it smack dab in the middle of that perfect circle. The pan should be on medium to low heat or else the bread tends to burn (it'll also burn if you're lallygagging & taking photos!!!). You may want to place a lid on the pan so the top of the egg cooks at the same rate as the bread.
4. Keep a close eye on the egg in a basket so the bread doesn't incinerate itself. Wait until you get your desired consistency of the egg. If you like it runny take it off or keep it on the flame for a couple extra minutes so it's 100% cooked.
You can add a bit of avocado, maybe some slices of tomato, sautéed bell pepper or whatever your heart desires. This simple, hearty, & vegetarian-friendly recipe is the perfect way to start your day. I have seen these quite a bit, but I have never once attempted to make them. As far as I know eggs in a basket is the name they go by, and as for quick breakfast, usually coffee and creamer with an egg white sandwich in the morning. Of course don't forget the cheese or the Sriracha Sauce. Now I am hungry, and I don't have any of those ingredients. Damn!... Lol

Growing up we always called these Eggs on Toast. Very creative name right? I also flip mine and cook them on both sides. I always cross my fingers hoping I won't break the egg when I flip it. I'm going to give this a try with coconut oil next time! Thanks for the inspiration!
