El Cielo Winery Resort by Karisma
We ventured to El Cielo Winery on Ruta del Vino Valle de Guadalupe, a hot spot for Mexican wine & definitely one of the popular Baja California wineries. We only stayed for the afternoon but you could make a week-long trip on Valle de Guadalupe wine tours & eating all the delicious fresh food & goods sold in the area. Restaurante El Cielo has fresh seafood & other unique dishes to keep your mouth watering.El Cielo Winery & Resort feels like a sanctuary with rolling views & peacocks strutting around. The property even has two lakes. Viñedo El Cielo Valle de Guadalupe buzzes with people young & old. We visited in February & it was totally popping. People sipped wine, ate food, & enjoyed everything the resort has to offer. You can even shop for El Cielo vinos online! It's the perfect spot to stay if you want to go on a wine tasting.

Hotel El Cielo Valle de Guadalupe / Hoteles en Valle de Guadalupe Ensenada
El Cielo winery resort has more than wines & wine tasting. Located on the Wine Route of Ensenada, Mexico, the resort has a range of cool rooms such as the Junior Suite, Master Suite, Owners Suite, & the Residence Master Suite which is 2,669 sq. feet / 248 sq. meters. Smaller suites usually come either with a king-sized or two queen beds. Enjoy room service or head down to the restaurant.

The tour was in Spanish so I didn't understand much - I'm studying Spanish but it's not the level of complexity where I can understand wine terminology. That said, you can do a tour of El Cielo winery Valle de Guadelupe. Learn all about the El Cielo vinos Mexican wine so you can figure out if you want to buy a bottle to go. The wine cellar is underground with minimal lighting, so keep that in mind if you have any sensitivities. The wine tasting is a unique experience!

Ruta del Vino Valle de Guadalupe is known for its food, so whilst at El Cielo, eat at Latitud32, a fusion of Baja-Yucatán cuisine & Polaris, which they call baja-avantgarde cuisine. At Latitud32, you try their regional seafood dishes such as the Grilled Octopus or Black Mayan Ceviche. Don't eat seafood? They have vegan options as well.We hung out at Latitud32 outside by the fire pits. Order a beer, wine, or beverage from restaurante El Cielo. We had some kids with us too so you can get juice, soda, water. Perfect place to get some grub after checking out El Cielo winery/viñedo El Cielo.

The gift shop has plenty of gift options. You can buy El Cielo vinos, handcrafted jewelry shaped like grapes, t-shirts, bottle openers, & other goodies. The gift shop is quite large with an assortment of options depending on your style. I was debating buying one of the grape shaped pieces of jewelry (there were bracelets, earrings, necklaces) & couldn't decide on anything, but wish I had bought one!

Queretaro has some exquisite churches & even some Franciscan missions. Awe at the pale yellow towers of Templo de la Congregacion de Guadalupe. Take a tour of Templo y ex-convento de la Santa Cruz de los Milagros. There's the Iglesia de Santa Rosa de Viterbo.Go inside a church whenever possible. Sit in the back rows or stay to the side so you can respectfully view the inside without interfering with anyone praying. Some of the churches in Queretaro are quite phenomenal. You can see a lot in the city center.

What Is Huitlacoche? What Does Corn Smut Taste Like?
Mexico has a vast range of positively scrumptious food. Authentic Mexican food is next level. A bean & cheese burrito or store-bought taco doesn't quite articulate the multitude of flavor & variety Mexican food has. And then we also have drinks, which is a subject of its own. Don't get me started on horchatas.
Okay, you're searching the internet trying to figure out what the heck is huitlacoche? How do you even use it? Is it edible or do you have to throw it away? Is it safe to eat huitlacoche (corn smut edible)? I've done all the research for you so you can get all the answers right here. Keep scrolling interesting keep reading.
What is huitlacoche in English?
In the United States, American farmers often call it corn smut fungus.
What is huitlacoche (corn smut / ustilago maydis)?
Corn smut is a plant fungus caused by Ustilago maydis. Huitlacoche is basically a corn mushroom or corn truffle that grows on the infected corn kernels on corn plants. You might know it as corn smut or common smut. While most farmers in the United States would consider this fungal plant disease an infection worthy of eradication, fungus corn smut is considered a delicacy in Mexico, more commonly referred to as "huitlacoche." You might even hear it referred to as cuitlacoche, corn truffles, Mexican truffle, Mexican huitlacoche, maizteca mushrooms, corn mushrooms, & bunch of other terms.
Is Huitlacoche Safe to Eat?
If you're left wondering: well, is this fungus safe to eat? Yes! The corn fungus caused by ustilago maydis can be found on ears of corn is considered a maize mushroom or type of edible mushroom. Yes, it's safe to eat. It's actually a Mexican delicacy. Taste a piece of Mexico. Not only is it safe to eat but there are plenty of ways that you can eat it & make it - from huitlacoche quesadillas to soups to tamales. You can eat it in a lot of savory and smoky dishes with some salt and pepper.
Can You Eat It While Pregnant?
I'm not a doctor so I am no clue about that; make sure to check with your own doctor based on your own health conditions. Definitely worth asking your doctor before ordering some at a restaurant. Just to be on the safe side!
How Is Huitlacoche Pronounced?
That's a great question because it's somewhat difficult when you first look at it. You can pronounce it weet-la-ko-che (the 'che' should sound like 'che' in 'checkers.') If you want to be super authentic then you can pronounce it more like "hwee-tla-ko-che."
Huitlacoche Taste - What does fresh huitlacoche smell like, taste like, look like?
Don't forget this corn growth is a culinary delicacy. The plant fungus grows on corn kernels. The infected kernels change color & shape. The name corn smut fungus doesn't sound so appetizing, so I love referring to its name in its mother tongue. I first tried huitlacoche back in 2016; I even mentioned it in my July A - Z monthly recap & my July Favorites. Mexican cuisine is delicious; I always eat something new & foods can vary by state & by cities. My boyfriend's mom made a fresh batch. Fred's parents are from Central Mexico. I've been able to taste some delicious Mexican food homemade by Fred's mom, including some regional specialties from their hometown.
I ate it by itself, as a side. It's earthy but not as stinky as mushrooms. It tastes like corn, even though it is a plant fungus. The spongy texture is a bit mushy, just like cooked corn. There might be an occasional fiber from the corn. It looks dark, like a blackish, brownish color, due to the corn fungus kind of the same color as a crimini mushroom or Portobello mushroom. If you enjoy mushrooms or kind of earthier foods with that type of texture, you will probably agree with the taste of huitlacoche corn smuts. You can find huitlaoche recipes online to cook it yourself.
How do you eat huitlacoche?
You can use this smut delicacy many ways. There are plenty of recipes. It's a versatile ingredient. You don't eat it off the cob as you would regular ears of corn. I loooove quesadillas de huitlacoche. The ingredients you'll are need organic corn tortilla, cheese, huitlacoche, that's it. You can use flour or corn tortillas. Delicious. If quesadillas aren't your thing, you can use huitlacoche Mexican truffle in your soup or burrito. You can make a huitlacoche taco or sopes. Basically, you can add huitlacoche as a filler or side, the same way you'd integrate something like black beans or mushrooms. Just check some recipes online. You can eat it with a tortilla or as a side dish on its own. You can add it to various types of dishes such as soups, tamales, huitlacoche tacos, whatever your heart desires.You can add onion, garlic, corn, cheese, tomatoes, tortilla, epazote leaves. These are common ingredients that go together with huitlacoche. Huitlacoche dishes to add some delicious earthy flavor and texture to the meal.
What's the nutritional value of huitlacoche?
High Protein
As cuitlacoche grows, fresh huitlacoche is higher in protein than most maize or regular corn, & could be considered as an alternative protein source for vegetarians (or anyone), according to a research study published in Food Science and Technology (Sociedade Brasileira de Ciência e Tecnologia de Alimentos).
High in Minerals like Magnesium & Phosphorus
The study also shows that huitlacoche is high in minerals magnesium & phosphorus. Higher magnesium intake may reduce the risk of stroke, diabetes, & osteoporosis (National Institutes of Health). So load up on that huitlacoche!
High in Fatty Acids like Oleic Acid & Linoleic Acid
Huitlacoche is high in fatty acids like oleic acid & linoleic acid. Due to the plant fungus & how it alters the corn, huitlacoche is loaded with nutrients corn doesn't normally have, such as lysine, an essential amino acid.
High Carbohydrate
At the end of the day, huitlacoche is still corn, so it has a high carbohydrate content. The great news is that huitlacoche has a high cellulose content (a type of carbohydrate), which can be beneficial for digestion. Sounds like a win to me!

You're likely to find it at a Mexican restaurant but there are some canned huitlacoche varieties as well. I haven't tried canned, only fresh huitlacoche, so I can't say from experience. Fresh is usually always best. You can even had to a Mexican market to see if they have it or know someone who grows it. Know any farmers? Ask them. Farmers might be a good place to start.

I've had plenty of times & each of the restaurants makes it their own unique way. The seasoning might be different or the flavors or the texture but it's the same main ingredient no matter what. Enjoy a view of the Pacific Ocean from Playas de Tijuana in the Northwestern corner of Mexico. Spanish for "beaches of Tijuana," Playas de Tijuana is a beach spot located right at the border of Mexico & the United States near downtown San Diego, California and the Balboa Park area.
The border fence itself extends out into the ocean with San Diego on one side and Mexico on the other. You'll find street art, a variety of amazing food options, & serene views at this unique beach at this border city. There are many things to do in Playas de Tijuana and several are free!

Search a place to park, then take in the experience, the vista (view). The water looks beautiful, a popular location for hanging out. The park is located near the parking area so guests can hang out there if they don't really want to be right in front of the playas.

Murals & graffiti cover the metal bar fence. Someone wrote "the peace is possible" across 11 of the iron bars. Another says "hay sueños," Spanish for "there are dreams." There's a red heart, a smiley face, hand prints, a peace sign. People's names: Juan, Hector, Mario, Ivan.
Separate from that, Playas de Tijuana has a dolphin sculpture, a lighthouse, & Tijuana sign for your Instagram selfie needs.
Stroll the Playas de Tijuana Boardwalk
People watch as you strut your stuff across the boardwalk. Although there are some tourists, you'll more often see families hanging out together, couples grabbing lunch, kids running across the boardwalk, shop owners setting up for the day.
You might see border agents or Mexican police simply because you're so close to the border of California. The beach is also dog-friendly, I saw people walking their dogs & enjoying the beautiful beaches with their canine friends. Free beach access is always a win!

Eat the Yummy Food
One of the best things to do at Playas de Tijuana is to eat an authentic meal with a peaceful ocean view. You can't beat the location! There are many food options as you walk across the boardwalk. Lots of amazing seafood & micheladas. Eat a huitlacoche taco or fish tacos. Eat fresh fruit. Keep an eye out to see what's open. We were there around noon; many restaurants were closed or just opening up. Eating is obviously one of the best things to do in Tijuana (& Mexico & everywhere!).
Depending on when you arrive, there are reasonable parking options. We were there midday midweek & had absolutely no problem at all. Visit during a busy weekend or holiday, & parking might be more difficult to acquire. Search for a spot & it should be relatively easy to find a great place.

What do to in Tijuana / Playas de Tijuana
Spend a day or weekend in Tijuana. You can do a lot in the area that's a quick drive such as the Tijuana Cultural Center, exploring downtown Tijuana or Zona Urbana Rio Tijuana area. Eat street tacos, watch the street performers, go to a tequila tasting, or drink Tijuana's craft beer scene. I talk about the craft beer a bit in this article. Go get a Caesar salad at Caesar's. Travelers can stay at a luxury property or a budget hotel, whatever suits you the most.

Come to Playas de Tijuana, Mexico for a day trip; there are plenty of things to do. This is the perfect location to stay a couple of days to remain within a few miles of the center of the city. There are many attractions nearby within driving distance, including restaurants, shopping, and other Things To Do in Playas de Tijuana. If you have some extra time to travel, Baja California is the perfect place to visit. There are a lot of great hotels available at an excellent price. You can find a good property, apartment, house with wifi to stay the night. Who can resist a good place located by the beach? Playas de Tijuana has a little bit of everything, food, great views, art.
